Home canning and fermentation can produce food that makes people seriously ill when a process is improvised. Clostridium botulinum grows in low-acid, oxygen-free environments — which is precisely what a sealed jar is. We publish target pH values, tested-process references and explicit warnings, and we label clearly when a recipe is refrigerator-only. You are responsible for following a tested process, verifying your own acidity, and adjusting processing time for your altitude. When our page and the NCHFP disagree, follow the NCHFP.
