Tight means first pick lands within two weeks of that zone's average first fall frost. It is doable, with zero slack in the indoor start.
Cultivar is not a detail here
Basil cultivars are not interchangeable. Genovese carries a high proportion of linalool and eugenol and comparatively little estragole — which in plain terms is why it tastes like pesto and Thai basil tastes like anise. Substituting is not a downgrade, it is a different sauce.
Genovese also has the largest leaves of any common sweet basil, which matters when a batch of pesto wants four packed cups of leaf.
Pinching is the whole technique
A basil plant left alone grows a single stem, flowers at eight inches, turns bitter and is finished. A pinched plant branches at every cut and keeps producing until frost. The difference in total yield is roughly fivefold.
- First pinch: when the plant hits about 6 inches, cut just above the second true leaf pair.
- Every pinch after: take the top two leaf pairs, always cutting just above a node.
- Any flower spike: remove it the week it appears.
Harvest is pinching. Cut for dinner and you are also doing the maintenance.
Succession sowing
Basil is cheap and fast. Sow a new tray every three weeks from spring through midsummer and you will always have young, sweet leaf rather than a tired plant that is fighting to flower. Two thousand seeds in a packet makes this effectively free.
Yield
About half a pound of usable leaf per plant across a season with disciplined pinching. A single batch of pesto wants around 4 oz of leaf, so two plants per batch is the honest number — and three if you plan to eat any of it fresh.
Pesto does not can. There is no tested process for it, and there will not be — it is a low-acid, oil-based, uncooked purée. Freeze it, in ice-cube trays, and it keeps its colour and flavour for a year.
How this crop actually fails
Named, specific, and in the order you're most likely to meet them.
Plant sends up flower spikes and the leaves turn bitter
Cause Bolting. Basil's whole strategy is to flower and set seed as soon as the days get long and hot.
Fix Pinch every flower spike the week it appears — this is the entire job of growing basil well. Pinch above a leaf pair and the plant branches instead.
Blackened, collapsed leaves after a cold night
Cause Cold damage. Basil is damaged below about 50 °F, well before frost.
Fix Transplant two weeks AFTER last frost, not on it. In autumn, harvest the whole plant before the first cool snap rather than losing it.
Yellow patches on top of leaves, fuzzy grey underneath
Cause Basil downy mildew. A serious, widespread disease that kills a plant in about two weeks.
Fix Airflow and dry foliage — never overhead water. Choose resistant lines where available. Once established it is not curable; harvest everything usable immediately.
Long leggy stems, few leaves
Cause Not enough light, or never pinched.
Fix Pinch back to a leaf pair above the second true set as soon as the plant is 6 inches tall. Each pinch doubles the branch count.
